Cream of Broccoli Soup
Cream of broccoli soup is a smooth, and creamy soup made from broccoli. It’s a comforting soup and healthy too. Also, there is no need to add any corn starch to get the thick creamy texture.

Ingredients
1 cup broccoli florets
1 onion chopped
3-4 garlic cloves - chopped
3 cups of water
1.5 cups milk
1 tablespoon whole wheat flour
2 tablespoon oil/butter
salt and pepper as required
1 tbsp cumin powder
chopped coriander
Instructions
Heat 1 tbsp oil in a saucepan. Add the onions and garlic and saute till they soften.
Add water, salt, and pepper. Cover the pan and bring to boil.
Then add the broccoli and again cover the pan till the florets soften.
Allow the mixture to cool down and then blend to a smooth paste.
In another pan heat 1 tbsp oil and add the flour. Stir and saute for 2 minutes on a low flame.
Add salt and pepper.
Now add the 1.5 cups of milk in batches of three. Add 1/2 cup and stir to avoid lumps, then repeat the same two more times.
Add the broccoli paste and some cumin powder.
Mix well and cook on low flame for another 2-3 minutes.
Pour soup into individual serving bowls and garnish with chopped coriander.
Serve cream of broccoli soup hot, plain or with toasted buttered bread.
