Dates and Nuts Laddoo
These Date laddoos are a healthy snack that you can whip up in minutes. They are so simple and you just need a handful of ingredients!!
You can use any nut or seed combination available with you. There is no need to strictly stick to the ingredient list. You make your choice according to your taste but the procedure remains the same.
INGREDIENTS
10-12 soft Medjool dates, pitted and soaked in water for 2 mins
2 tbsp cacao coconut butter/ peanut butter/almond butter (You can also mix 1 tbsp coconut powder, 1 tbsp cacao powder, and butter)
7-8 almonds
Handful of walnuts
Handful of oats
1 tsp chia seeds
1 tsp melon seeds
Sesame seeds for garnishing
INSTRUCTIONS
In a large food processor or blender, process the walnuts, oats, and almonds until crumbly. If you want your nuts to be roughly chopped and not powdered you can blend all the ingredients together also.
Add in the dates, seeds, and butter. Process again until a sticky, uniform batter is formed.
Add the oats too and again process.
Scoop the dough out using tablespoons, then roll between your hands to form balls.
Roll the laddoos on some spread out sesame seeds.
Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life.
