Chicken Biryani
Biryani is something that we normally never think of cooking at home. It is believed to be one of the most difficult things to cook and so we usually prefer ordering it or going out for biryani.
But this recipe is one of the simplest I have come across. Try this at home and you will not be disappointed.
Recipe:
Prep time: 1 hour
Cook time: 30 min
Marination ingredients :
1/2 kg Chicken
3 tbsp curd
1+1/2 tbsp ginger-garlic paste
1/4 tsp turmeric powder
1 tsp red chili powder
1 tbsp garam masala
1 tbsp lemon juice
salt as per taste
Other Ingredients:
2-3 bay leaf
3-4 green cardamoms
1 black cardamom
5-6 cloves
1-inch cinnamon
1-star anise
1 strand mace
1/2 tsp shahi jeera
2 cups basmati rice
2 tbsp ghee
2-3 large onions sliced
2 green chili slit
1/4th cup curd
1/2 tsp red chili powder
1 tsp garam masala
3 cups of water/ light coconut milk
3/4 the tsp salt
some fried onions
Instructions:
In a bowl add the chicken pieces and all the other marination ingredients.
Mix well and leave the marinated chicken to rest for at least an hour.
Soak the basmati rice in water and leave it for 30 minutes.
Heat ghee in a pressure cooker and saute the whole spices ( bay leaf, green cardamoms, black cardamom, cloves, cinnamon, star anise, mace, and shahi jeera) for 1-2 min.
Now add the sliced onions and fry till slightly brown.
Add the marinated chicken and cook till it becomes soft. Evaporate if any moisture left in the cooker.
Now add the curd, green chilies, red chili powder, and garam masala. Mix nicely with the chicken.
Layer the chicken to cover the bottom of the pressure cooker evenly.
On top of the chicken layer the soaked rice.
Pour 3 cups of water and add salt. Sprinkle the fried onions (for fried onions just deep fry sliced onions till brown).
Cover the pressure cooker and cook on medium flame till you get a whistle.
Turn the gas off immediately after a whistle and do not open the pressure cooker.
Let the pressure settle.
Serve the biryani with raita and enjoy!!!
